Several varieties of lettuce continue to bloom in one of the high tunnels Paul Wiediger, who runs Au Naturel Foods, uses to grow produce during the colder months. The tunnels are referred to as unheated greenhouses and are substantially cheaper to erect than a traditional commercial greenhouse.
