From fitness to food stuffs

GLASGOW —

Little did Dan Polak know that one day he would work in the same building as a chef and as a personal trainer.

Polak is the new chef at Stellar House, near the corner of North Race and West Main streets.

Several years ago he worked as a personal trainer in the same building that now houses the restaurant; back then the building was home to Active Life Gym.

Polak, of Bowling Green, answered restaurant owners Sandy and Peggy Bates’ call for a chef.

“I came in and spoke to Peggy and Sandy and kind gave them an idea of what I was looking at as a chef; the direction I want to go,” he said, adding he asked them whether his ideas matched theirs. “We both agreed our outcomes were about the same, and I just kind of jumped on board.”

Polak began working at Stellar House in early January.

“I kind of rocked in the new year with the New Year’s party and just took over from there,” he said.

Polak has been a chef for about eight or nine years. He was previously a sous chef at Nashville’s Table 3 Restaurant and Market and head chef at the Brickyard Cafe´ in Franklin.

Peggy Bates checked Polak’s references, who  spoke favorably of him and told her he would be the right fit for Stellar House.

“I think we have some people coming in now because of Dan,” she said.
